One Minden Tapas' Flavours of Spain menu is inspired by Andalusia in Southern Spain where the famous Iberico pigs that thrives on acorns call home. The menu extensively features Iberico pork, including the Iberico Pork Check, 36-month Iberico Bellota Ham and Housemade Iberico Bellota bone broth. The fusion dish of Inaniwa Udon in Housemade Iberico Bellota Bone Broth pays homage to the hometown of Chef Antonio Moran, which is a small town near Seville, with a large Japanese community that has been integrated with the fabric of society for over 400 years.
Helmed by Executive Chef Antonio Moran who gained his experience and techniques from a number of Spanish Michelin starred kitchen such as Martin Berasategui, Lillas Pastia, and Taberna del Alabardero. One Minden Tapas Kitchen adopts a "Spanish by Spanish" concept, re-creating traditional Spanish dishes with contemporary techniques and presentation.
