About John Anthony | Spanning 7,000 square feet, the restaurant is named after John Anthony, a business man who played a significant role promoting global trade during the colonial times. As a tribute to his past contributions in East-West cultural exchange, the restaurant menu is primarily based on traditional Chinese cuisine but uses ingredients flown in from around the globe, applying state-of-the-art Western cooking techniques. This cross-cultural culinary approach is well reflected by the restaurant’s décor fusing Eastern, Western and local elements. For example, the fabric adorning the ceiling was made at a dye workshop on Lamma island to bring a sense of outdoor comfort. Sustainability is also woven into the interior by tiling the floor with reclaimed terracotta from old Chinese village houses.
