First appeared in 2011 in Marylebone, London, as a two-year pop-up restaurant, followed by a grand comeback to London five years later. Simon Rogan incorporated the elements and ideas of his two-Michelin-starred L’Enclume into Roganic, which is operated alongside with Aulis as Rogan’s chef’s table and development kitchen. As Roganic’s R&D base, Aulis explores seasonal fresh produce and creates novel culinary delights, recognized by the award of one Michelin star in just ten months.
