Many of the culinary masterpieces at Mr. Ming's feature elements of care and love in using only the finest handpicked ingredients. Each ingredient is approved by Head Chef Hui, who curates each receipt and oversees the quality of every dish that leaves the kitchen. Starred dishes include Signature Braised Supreme Bird’s Nest, Braised Kanto Premium Sea Cucumber, Deep-fried Duck Fillet Stuff with Mashed Taro and Stewed Japanese Dried Oma Abalone in Oyster Sauce (23/CattY), covering a selection of Chiu Chow and Cantonese classics.


Mr. Ming is an avid fan of the Chinese Arts, a writer of Poetry, a collector of all things gold, and a lover of fine food and wine. He expresses his joy of collecting throughout the restaurant; the many secret recipes showcased, the fine-detailed artwork and collection of coins emblazoned, and his personal selection of boutique wines on offer.

Mr. Ming’s prestigious family lineage hails back to the Jin Dynasty, his respect for tradition and obsession with collecting valuables began at a young age. If he found value in something, he began collecting it. His most prized possession is that of his Grandfather’s Book of Chiu Chow and Cantonese recipes - passed down through generations and kept a family secret.
