May is the time to celebrate all things French. As Hong Kong is warming up for summertime, it shares much affinity to the region of Provence-Alpes-Côte d’Azur, as both places boast a generous amount of sunshine and dynamism during the season to be translated to their respective cuisines.
In collaboration with Perrier-Jouët Champagne and Vines and Terroirs, Brasserie on the Eighth has invited Michelin-starred restaurant chef Stéphane Gaborieau to return to Conrad Hong along with one of Southern France’s greatest chefs, Chef Francis Chauveau. Together they will join the restaurant’s Chef Daniel Lee in a six-hands dinner showcasing the wonders of Mediterranean French cooking between 14 and 20 May.
Standing out for its costal location and amiable climate, the vegetables, meat and seafood from Provence have been prized and served as the backbone of the region's cuisine, one admired widely and aggrandised by our visiting chefs. Chef Stéphane is chef-owner of one Michelin-starred Le Pergolese in Paris. Known for re-interpreting Southeastern French food with Japanese touches, he owes parts of his mastery in the regional culinary tradition to working in the kitchen with Chef Francis. The latter, retired since 2008 having achieved two Michelin stars with his restaurant, was awarded France's National Order of Merits for honouring the Provençal gastronomic traditions. His guest appearance marks a very special occasion where he puts on the apron again and turns the herbs and flowers from the French Riviera into sensational dishes for guests of Conrad Hong Kong.
