At Fumi from April 19 to 21, Aoki will present menus that include both traditional Edomae-style sushi and more modern interpretations of the dish, revealing how sushi has evolved over time. So that diners can appreciate the craft Aoki puts into every piece, Aoki will make sushi tableside, right in front of guests’ eyes. Highlights include Nodoguro with Dried Mullet roe, the savory grilled Nodoguro are topped with homemade dried mullet roe with herbs that had been marinated for a month. This is one of AOKI’s signature “modern sushi”.
FUMI is a Japanese restaurant and bar committed to bring the best of the country's food and drink to Hong Kong, serving delectable dishes in an elegant space filled with Japanese-inspired art, furniture and tableware. On top of serving omakase dinners, kaiseki meals, à la carte dishes and set lunches, FUMI will offer an extensive range of sakes and a selection of Japanese wines.
