On the evenings of 19 and 20 January, HAKU will host its very first collaboration of 2018 with the illustrious 1-Michelin-starred restaurant Amelia from San Sebastián, Spain. For two nights only, Chef Paulo Airaudo of Amelia will join Chef Balbi in the HAKU Hong Kong kitchen to present an exclusive 8-course joint menu.

Born in Argentina to a family of food-loving Italian immigrants, Chef Paulo Airaudo began his culinary career at the young age of 18. Honing his skills across the globe from Mexico, Peru and Europe, a few of Paulo’s noted tenures include 3* Arzak in San Sebastián, 3* The Fat Duck by Heston Blumenthal near London, and 1* Magnolia in Rome. After successfully co-creating a modern trattoria in Geneva that received its first Michelin star only four months after opening, Paulo launched his first personal venture in the heart of San Sebastián – a nod to his humble beginnings as a chef. Only seven months after opening, Amelia received its first coveted Michelin star on the recent Michelin Guide Spain & Portugal 2018.

Agustin Balbi, Executive Chef of HAKU, was named Best New Chef 2016 by Hong Kong Tatler. His diverse international experience is reflected in beautifully prepared contemporary dishes that are heavily inspired by his work in Japan. HAKU represents the culmination of Matsuo’s philosophy and Balbi’s technical prowess, through shareable Japanese cuisine within a casual chic ambiance and a kappo-style kitchen. Also known as the “theatre”, the kappo concept promotes conversation flow between chefs and guests. The freshest and highest quality ingredients flown in daily from Japan will be prepared in the traditional Japanese way and accented with innovative European twists.
Spice up your midweek blues on 24th January 2018 (Wednesday) with a Michelin Star Chef Wine Dinner. Enjoy a delectable 7-course dinner with wine pairing in a private room at the elegant restaurant -- Aqua, with amazing views over Hong Kong's skyline at Tsim Sha Tsui.

Chef Giuseppe D'Aquino opened Ristorante Oseleta at the Villa Cordevigo Wine Relais, an eighteenth-century Venetian villa with formal Italian gardens and its own olive groves and woods. In 2013, it received a Michelin star, thanks to the beautiful setting, attentive service, and dishes which take inspiration from all the different regions of Italy.

On the last Wednesday of every month, Chef Ricardo Chaneton takes diners on a sensory journey with a Carte Blanche Experience. The 6-course menu will offer diners an opportunity to enjoy the inherent surprise of a tasting menu with dishes that Chef Ricardo has never created previously. The dishes will be creatively prepared with fresh market ingredients and the catch of the day.
Surprises of the Blind Tasting menu do not only come on a plate, but also in a glass. To complement Chef Ricardo's creations, there is also an optional wine pairing by Master Sommelier Yohann Jousselin, who will select the best wine to pair with each course on the menu.
The 4-course dinner is priced at HKD 980, while a 6-course dinner experience is priced at HKD 1,480 per person.
