Chef Pieter's favorite dish on this menu is the Montgomery’s Cheddar
Shortbread. Montgomery cheddar is one of the few truly traditional,
handmade, unpasteurised types of cheddar made on the Montgomery farm in
Somerset. It is such a rare ingredient that only a dozen Montgomery
cheeses are made every day. The puffy texture and complicated flavour of
the shortbread requires a long preparation time and demands years of
experience. Chef Pieter folds it 3 times in order to create the puffy
shortbread texture. This is a must-try quintessential British Dish.
Pairing cocktails are ready to liven up the menu. Unlike wine, cocktails can be invented and tweaked to perfectly match with a dish. To spice up the Montgomery’s cheddar shortbread, couple it with Flint Grill & Bar's in-house Negroni, a classic cocktail with gin, Campari and vermouth.
